Biography
35 years old. He began at Mugaritz, the kitchen that marked his way of conceiving his profession. He returned to Madrid, to the cuisine of sensitivity and produce at La Tasquita de Enfrente, before standing out at Picones de María with his own point of view and a language that draws on tradition and risk.
